We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. As soon as we’ll be ready, we’ll begin with our traditional cooking lesson where our mothers and grandmothers will show you all the techniques for making Focaccia, handmade pasta and cheese. They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Non è possibile visitare il Salento senza fare un’escursione a piedi in natura ! Che tu sia uno sportivo, un camminatore oppure un semplice turista non puoi non lasciarti travolgere dalla bellezza del nostro paesaggio, dai colori e profumi della macchia mediterranea e dai bellissimi e ampi orizzonti. Partiremo dal porto di Otranto, passeremo vicino la grotta Palombara e la vicina masseria delle Orte; ci allungheremo fino a Punta Faci e ritorneremo passando per il laghetto di Bauxite e la magica torre del Serpe. Il percorso dura circa 3 ore

Ci troveremo al porto di Otranto o su richiesta un altro porto in Salento (Frigole, San Foca, Gallipoli, Santa Maria di Leuca) dove imbarcheremo sul mio gommone di 6,5 metri e da lì decideremo assieme l’itinerario sulla base delle condizioni del mare, vi porterò a fare il bagno dove l’acqua é più blu, lontano dal caos delle spiagge affollate. Vi offrirò un rinfresco a base di acqua, bibite, frutta fresca e frise (tipico pasto salentino) bagnate nell’acqua di mare, come fanno i pescatori da oltre 2 secoli. Pescherò dei ricci che mangeremo a bordo, e se avremo fortuna, proveremo a pescare qualche pesce facendo un po’ di traina o bolentino. Trascorrerete così una giornata differente, all’insegna del mare e della sua semplice bellezza...la tintarella é assicurata!Il mio gommone é equipaggiato di tutte le dotazioni di sicurezza entro le 12 miglia, doccia con acqua dolce (50litri), ghiacciaia, cuscineria prendisole con spugne, tendalino parasole, fornelletto per un ottimo caffè a bordo e tutta la strumentazione necessaria per la pesca e la navigazione.

Partendo dal porto di San Foca su cabinato a vela di 13 mt in direzione Torre dell'Orso / Otranto, vivrete il mare del salento godendo delle sue bellezze ed ammirando la costa da un punto di vista unico. Completeremo, per chi lo vorrà, l'esperienza cucinando a bordo e facendovi apprezzare la cucina locale.

Non solo passi, attenzione... soprattutto ascolto del proprio corpo in accordo coi battiti del tamburo. Esploreremo il concetto di ritmicità, faremo "nostro" il ritmo della pizzica, come un abito cucito su misura, balleremo insieme ma soprattutto ci divertiremo! Qui si respira veramente il cuore pulsante della "terra del rimorso" poiché nella città di Galatina confluisce il fenomeno del tarantismo e il rituale del 29 giugno. From one place to the other we will stop to some shops to delight your palate with the most famous samples of Salento street food such as the "rustico": a soft puff pastry disc filled with mozzarella, tomato and béchamel, or the "frisella": a twice-baked bread roll topped with fresh tomato and olive oil . The tour will take place either at lunch or dinner time, as it is an ideal way to do some sightseeing while having a light meal like locals use to do. La "Cooking class with Livio" nasce dall'amore per la cucina italiana e per il Salento, terra in cui sono nato e cresciuto. Mi diverte molto l'idea di fare conoscere alla gente le basi della cucina salentina, fare vedere passo dopo passo come nasce la pasta fresca. La mia esperienza infatti, è un full immersion di una durata di quattro ore nell'arte dell'impastare. Scoprirai stupendoti che bastano veramente pochi ingredienti, di uso quotidiano tra l'altro, per realizzare la tipica pasta leccese. Divertimento è la parola chiave della "cooking class with Livio", inteso come curiosità nella scoperta di questa arte. Ti guiderò in maniera pratica nella realizzazione della pasta fresca e con amore per la mia terra vi racconterò qualche aneddoto e curiosità sull'importanza di questa arte per noi leccesi. Quella che faremo sarà una piacevole passeggiata al tramonto nella pineta di Porto Selvaggio , godendo della frescura e dei profumi della macchia mediterranea , visitando costruzioni simbolo del salento come una Pagghiara e una masseria fortificata, ma soprattutto una antica torre di avvistamento che sorge sull'altura del parco. Sempre passeggiando nella pineta arriveremo nella bellissima baia di Porto Selvaggio dover chi vorrà potrà fare un bagno al tramonto. L'escursione durerà in tutto circa 3 ore .

Partiremo da porta San Biagio a lecce dopo un buon caffè in direzione Acaya, bellissimo borgo fortificato , percorrendo la via Francigena . Successivamente pedalando nella bellissima campagna salentina arriveremo nella riserva naturale WWF delle Cesine . Chiuderemo con un rinfrescante bagno nel mare accanto al faro di San Cataldo.
